What Pop-Ups Actually Charge: Real Prices From New York to London

Why we did this

Everyone thinking about starting a pop-up asks the same question: what do I charge? Most answers online are guesses. So we went and found real prices that pop-ups and supper clubs actually published, with where we found each one.

The prices

Toronto prices are in Canadian dollars. Prices are as published by each source at the time we found them.

What the numbers say

Most pop-ups live between $25 and $100. The window steak at $25 and the London supper clubs at £30 to £90 are the normal world. The $1,500 dinners are famous chefs and headlines, not what you should charge for plates on your stoop.

Scarcity does the marketing. The steak window only does a few dozen plates a night, two nights a week. That's not a weakness. A short window and a limited count is why there's a line.

One plate, one price is easiest. The cheapest pop-ups on the list sell one thing at one price. No menu, no decisions, faster line.

Collabs charge more. Every one-off collab night on the list is priced above the same cook's regular dinner. Two names on the flyer is a reason to pay more.

How to price yours

1. Start from what one plate or one session costs you to make, then at least double it.

2. Look at what's near you. A $25 plate works on a block where a takeout dinner is $18.

3. Keep it to one or two items at first.

4. Sell a fixed number, and say so. "40 plates, then we're done."

5. Raise the price when you sell out three times in a row.

Where to put it

Once you have a price, people need to know you're open. On Secret World a pop-up is a flame on the map that shows while you're open, to the people close enough to come. It's free to post and there's no cut. More on that in A steak window, a pizza drop, and the map they're missing.
